Easy Healthy Summer Lunch


For breakfast, brunch, lunch, or anytime you’re hungry this summer. Not sure I’ve ever done this before!


Thank you to Yvette from my Getting Right with God class for alerting me recently to the fact that cucumber rounds can be used as an alternative to crackers in almost any situation! Most of my realizations in that class have been far more spiritual, but this healthy hack is a blessing too. 😊


I used sliced cucumbers (thanks to Betty Ayala and Discipleship Now) to dip/scoop eggs.


You can toss into the eggs as they're cooking:

  • leftovers and veggies (I've been known to add brown rice, broccoli, and pretty much any raw or cooked vegetable lying around)

  • good fats (coconut oil, cottage cheese for extra protein if you're not dairy-sensitive, etc.)

I let it all cook while washing dishes (#multitasking 😊).


Then, top with your favorite spices, and eat it with cucumber.

I like how the eggs are warm and the cukes are cold.


Refreshing and satisfying!
